Yummy Chili for a Rainy Day

CHUNKY VEGGIE CHILI

2 medium potatoes - cubed
1 medium onion - chopped
1 yellow bell pepper - chopped
1 tablespoon chili powder
1 teaspoon ground cumin
1 can (28 oz) whole tomatoes - undrained
1 can (15-16 oz) garbanzo beans – drained & rinsed
1 can (15 oz) black beans – drained & rinsed
1 can (8 oz) tomato sauce
1 medium zucchini, cubed

Heat all ingredients except zucchini to boiling in a Dutch-oven, breaking up tomatoes & stirring occasionally – reduce heat, cover & simmer for 13 minutes.
Stir in zucchini, Cover & simmer 5-7 more minutes or until zucchini is tender – then serve!!
